8 Smart Chicken tenders
Salt and freshly ground black pepper
8 slices prosciutto or thin-sliced bacon
2 Tablespoons extra-virgin first cold-pressed olive oil, or more
Lemon wedges, for serving
-Preheat oven to 425 degrees F. Cut Smart Chicken in half or thirds. Season Smart Chicken with salt and pepper, top each tender with 2 leaves of sage. Wrap each tender with a slice of prosciutto or bacon. Coat the Smart Chicken tenders liberally in olive oil.
-Arrange Smart Chicken tenders on baking sheet on parchment paper and bake until crispy and firm, 10 to 12 minutes.
-To serve, skewer the Smart Chicken tenders and serve with lemon wedges on a plate as an appetizer. Serves 4.
Note: You can substitute asparagus tips for the sage leaves and season with poultry seasoning. Then proceed with rest of recipe.
Note: For a great summertime meal, you can also serve these on top of a green tossed salad and a side of crusty bread.
