Chocolate Brownie Cookies
Everyone loves homemade cookies, but sometimes you just don't have enough time to make them from scratch. I have found that many of the recipes found on the outside of boxes or cans to be very easy and quite delicious. These cookies are no exception.
1 box Chocolate Brownie Mix
2 Tablespoons water
1/3 cup vegetable oil
3/4 cup toasted chopped pecans
-Preheat oven to 375 degrees F. Grease or spray with vegetable spray cookie sheet. Combine brownie mix egg, water, nuts and oil in large bowl. Stir until well blended and soft dough forms. Drop by level measuring tablespoons or small ice cream/cookie scoop about 2 inches apart onto greased cookie sheet.
-Bake at 375 degrees F. for about 7 to 8 minutes or until cookies are set in center. Do Not over bake!
-Cool 1 minute before removing from rack. Cool completely before frosting with Peanut Butter Frosting.
Peanut Butter Frosting
1 cup confectioners' sugar
1 cup creamy peanut butter
5 tablespoons unsalted butter, at room temperature
3/4 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup heavy cream
-Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth. Frost cooled cookies.
Note: Add the following to the dough before baking. 3/4 cup peanut butter chips, butterscotch chips or vanilla chips.
