Your family will be saying ole' when they taste this delectable south-of-the-border Smart Chicken dish. It's easy, delicious and oh-so-good! It can also be made in the morning and placed in the crock pot to be ready when you come home for dinner.
1/2 cup orange juice
1/4 cup lime juice1/4 cup tequila
2 Tablespoons vegetable oil
1 teaspoon Kosher salt1/2 teaspoon cracked pepper6 large Smart Chicken thighs

1/8 cup lime juice
1/8 cup tequila
1 teaspoon vegetable oil
Salt and pepper to taste
-Preheat oven to 350 degrees F. or fire up the grill to medium-high and set up one side for indirect grilling. If grilling lightly coat grill rack with oil or nonstick cooking spray.Place orange juice, lime juice, tequila, oil, salt and pepper in a large resealable plastic bag. Add Smart Chicken and seal. Marinate for 4 hours or overnight in refrigerator. Remove Smart Chicken from plastic and place it in a 9x13 baking dish. Brush with basting marinade on top. Continue basting every 5 minutes throughout baking cycle. Bake for at least 30 minutes or until Smart Chicken reaches an internal temperature of 165 degrees F.
-If grilling place chicken on direct heat and grill for 5 minutes per side. Remove to indirect heat and grill for 20 more minutes or until internal temperature reaches 165 degrees F. on an instant-read thermometer. Baste every 5 minutes with reserved citrus marinade. Serves 6. Serve with hot buttered garlic rice or wide noodles.
Note: If you want to use other parts of the Smart Chicken go right ahead. Just adjust the cooking time to fit the pieces of Smart Chicken.
