Not sure what to do with all those Thanksgiving leftovers? Then, why not make a traditional English dish called Bubble and Squeak. It is traditionally made with leftover vegetables and meat. The main vegetables are potatoes and cabbage, but carrots, peas, Brussels sprouts, and other vegetables can be added, along with your choice of meat. The name comes from the bubble and squeak sounds made as the cabbage cooks.
2 cups leftover mashed potatoes
1 cup leftover stuffing
1 cup left over turkey meat, diced
6 tablespoons vegetable oil, divided
Flour, for dredging
Salt and freshly ground black pepper
4 cups sliced cabbage or cole slaw mix
1 pound bacon, diced
1 large onion, sliced thin
Leftover cranberry sauce, for dipping, optional
-In a large mixing bowl add mashed potatoes, stuffing and turkey meat. Mix well. Using your hands form patties (about 3 to 4-inches wide). Dredge the patties on each side in flour. Place in refrigerator for about 30 minutes.
-Heat a few tablespoons of oil in a nonstick skillet and fry the patties until golden brown on both sides for about 5 to 7 minutes. Do this in batches, if necessary.
-In another large skillet fry the bacon and cabbage or cole slaw mix with the remaining oil. Salt and pepper to taste and saute' until cooked through, about 8 minutes or so. Place the bubble
and squeak on top of the cabbage. If using the cranberry sauce, serve the bubble and squeak along side it. Serves 6 to 8.
