
This dip, sometimes known as "Southern Caviar" will surely be the hit of your New Year's Eve party. However, it's awesome as a salad, or with an addition of some diced ham, it could be a great meal. It's great year-round, not just at New Year's.
1 large tomato, diced
1 garlic clove, minced
1/2 small red onion, finely chopped
1 small red bell pepper, finely chopped
1 jalapeno, very finely chopped
2 tablespoons green onions, diced
2 tablespoons fresh parsley leaves, chopped
2 (15-ounce) cans black-eyed peas, drained and rinsed
1/2 can corn, drained and rinsed
1/4 cup canola oil
1/4 cup rice wine vinegar, unseasoned
1/2 teaspoon sugar
Salt and freshly ground black pepper
-Combine the first 9 ingredients in a bowl. In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.
-Toss all together and let marinate for at up to 8 hours in the refrigerator before serving with your favorite snack chips.
Note: This is also a great salad or even a vegetarian meal.
Note: If rice wine is too hard to find, use white wine vinegar.
