2 sticks butter
1 cup brown sugar
1 cup toasted chopped pecans
Dash of cinnamon
Dash of grated nutmeg
8 bananas peeled and halved, cut lengthwise
1/2 cup dark rum
Splash of Gran Marnier or Banana Liqueur, optional
1 store-bought pound cake, (I like Sara Lee), optional
Or
Angel Food cake, sliced into eight portions
French vanilla ice cream
Dollops of whipped cream
-Melt butter in a large skillet. Add brown sugar, toasted pecans, cinnamon and grated nutmeg. Stir together. Add the bananas and cook until caramelized over medium-high heat. Pour in the rum and a splash of Gran Marnier, if using. Take pan off of stove. With a BBQ lighter, light mixture making sure to stand back when ignited and flambé. Let flame die down. Serve over vanilla ice cream and/or a slice of pound cake. Top with dollops of whipped cream. Serves 8.
Note: When making this recipe, be careful; a flame will rise up over the pan, so be careful.
Note: If you really love the taste of bananas, try this with Crème de Bananas instead of rum or Gran Marnier.
Note: If making this around children, make sure they stand back or leave the room.
