1/2 Cup softened butter
1 cup brown sugar
1 egg
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup raisins
1 cup broken nutmeats
1 cup persimmon pulp
- Cream butter and brown sugar.
- Beat in eggs, mix soda, spices, raisins,
and nuts with flour.
- Add persimmon pulp to creamed mixture.
- Stir in flour mixture. (Dough will be
rather wet.)
- Drop by tablespoon on a greased cookie
sheet.
- Bake at 350 degrees 12 – 15 minutes.
Makes 5 dozen.
