1/2 cup Italian bread crumbs
1/4 cup sesame seeds
2 teaspoon minced fresh parsley
1/2 - 1 cup mayonnaise
1 teaspoon onion or garlic powder, or more to taste
1 teaspoon dry mustard
1/4 teaspoon freshly ground cracked pepper
1 pound boneless skinless Smart Chicken Breasts (cut into 1-inch cubes)
1 pound bacon, each slice cut thirds, optional
Honey Mustard Dipping Sauce, recipe follows
- Preheat oven to 350 degrees F. In a large resealable plastic bag, combine the bread crumbs,
sesame seeds and parsley; set aside. In a small bowl, combine the mayonnaise, onion or garlic
powder, dry mustard, and pepper. Coat Smart Chicken in mayonnaise mixture, and then add to
crumb mixture, a few pieces at a time, and shake to coat.
- If using, cook bacon in a pan for a few minutes or in the microwave for a couple of minutes. Remove and pat dry with paper towel. Wrap bacon around each Sesame Smart Chicken cube and secure with a toothpick. If not using bacon, proceed to next step.
- Spray a baking sheet with Pam and place coated Smart Chicken on baking sheet. Place in oven
and bake for approximately 20-30 minutes, until a digital thermometer inserted into a few pieces of Smart Chicken reads 170 degrees F. and the bacon is also done. Serve with Honey Mustard Dipping Sauce. Makes approximately 25 appetizers.
Honey Mustard Dipping Sauce:
1/4 cup mayonnaise
4 1/2 teaspoons honey, or more for a sweeter dipping sauce
1 1/2 teaspoons Dijon mustard
- In a small bowl, combine sauce ingredients. Serve with the Sesame Smart Chicken Bites.
Note: I have also sprinkled a little Ranch House Seasoning (not buttermilk, though) over the Smart Chicken for added flavor.
