Why not treat Mom to a
very special breakfast on Mother's Day! Nothing could be easier than to
serve her delicious scrambled eggs that are light and fluffy and are
baked in the oven.
1/4 cup butter, melted
12 eggs
1 teaspoon salt
Dash freshly cracked pepper
1 1/4 cups milk
4 ounces cream cheese, cubed and softened
4-6 slices bacon, cooked and crumbled, optional
1/2 - 1 cup cheddar cheese, shredded
- Preheat
the oven to 350 degrees F. Pour melted butter into a glass 9x9-inch
baking dish. In Lafarge mixing bowl, whisk together eggs, salt and pepper
until well blended. Gradually whisking milk. Add cubed cream cheese and
crumbled bacon, if using. Stir again. Pour egg mixture into the baking
dish.
- Bake uncovered for 10 minutes, then stir. Add cheddar
cheese and bake an additional 15minutes, or until eggs are set. Watch
carefully. Serve immediately. Serves 6 to 8.
Mary Anne's Oven-Baked Scrambled Eggs & Bacon For A Crowd

24 eggs
2 1/4 teaspoons salt
1/4 teaspoon freshly cracked pepper
2 1/2 cups milk
8 ounces cream cheese, cubed
8-10 slices bacon, cooked and crumbled, optional
1 1/2 - 2 cups cheddar cheese, shredded
