
3 cantaloupes, peeled, seeded & chopped
2 c riesling
2 c water
1/2 c sugar
1 bu thyme
1/4-1/2 c fresh lime juice
2 T honey, if needed
pinch cayenne pepper
salt & pepper
thyme leaves for garnish
Combine riesling, water, sugar and thyme in a sauce pot, bring to a boil, remove from heat and chill
Once cold, strain into the bowl of a blender
Add melon and 1/4 c lime juice, puree until smooth
Season to taste with additional lime juice, cayenne, honey, salt & pepper
Adjust consistency with cold water, if needed
(Optional - strain through a sieve)
Chill in refrigerator until ready to serve
Makes 2 1/2-3 qts
