Smart Chicken Southwest Wraps

The flavor of the southwest is clearly evident in these Smart Chicken Southwest Wraps. These wraps are a perfect party appetizer, mid-game snack, or a quick lunch or dinner meal. Avocados, diced green onions, crumbled bacon or shredded cheese are great additions!

3-4 Smart Chicken breasts, bone-in, skin-on, (Enough to make 3 cups)

Or

3-4 boneless, skinless Smart Chicken breasts, (Enough to make 3 cups)

Olive oil

Salt and pepper

1/2 cup mayonnaise

1 Tablespoon lime juice

1 teaspoon chili powder or cumin

1 (10 ounce) can diced tomatoes and green chilies, (You can either use Ro-tel or diced tomatoes with green chilies)

1 (15 ounce) can black beans, drained and rinsed, (Be sure to drain really well)

1 (15 ounce) can whole kernel corn, drained and rinsed, (Be sure to drain really well)

1/2 cup chopped cilantro

1/2 cup diced red, yellow, or white onion, optional

7-8 (10-inch) flour tortillas

  • Preheat the oven to 350 degrees F. Place the Smart Chicken breasts on a parchment-lined baking sheet pan lined and with a pastry brush lightly brush with olive oil. Sprinkle with salt and pepper. Roast for 35 to 40 minutes, until the Smart Chicken reaches an internal temperature of 165 degrees F when inserted with a digital thermometer. Set aside until cool enough to handle. If using bone-in, skin-on Smart Chicken breasts, remove the meat from the bones, discard the skin, and with two forks shred the Smart Chicken. Otherwise, shred boneless, skinless Smart Chicken breasts.
  • Or, you can cook the Smart Chicken breasts in water with salt and pepper. Remove from the broth and let cool. When the Smart Chicken is cool enough to handle, remove meat from bone if using bone-in, skin-on and shred with a fork. Otherwise, shred boneless, skinless Smart Chicken.
  • In a large bowl, combine mayonnaise, lime juice, and chili powder or cumin. Stir in shredded Smart Chicken, diced tomatoes and green chilies, beans, corn, cilantro, and if using, onion. Spoon the mixture into each tortilla. Roll up tortillas tightly and cut into desired servings for an appetizer or sandwich wrap. Secure with raffia or fancy toothpicks for an appetizer. Makes about 20 appetizers if cut into thirds or 7 to 8 large sandwich wraps.
