Bread:
3/4 cup milk
1/2 cup butter
1/2 cup brown sugar
5 1/4 – 6 cups all-purpose flour
2 packages Fleischmann's Active Dry Yeast
2 teaspoons cinnamon
1 teaspoon salt
3 eggs
3 ripe bananas
1 teaspoon water
Sandwich Filling:
2 tablespoons peanut butter
1/2 tablespoon honey
1/2 apple, thinly sliced
- In a small saucepan, cook and stir milk, butter and sugar over medium heat until butter is melted. Cool mixture to 120 to 130 degrees F. In a large bowl, combine 2 cups flour, Fleischmann's yeast, cinnamon, salt, 2 eggs, bananas and milk mixture. Beat on low until combined. Beat on medium for 3 minutes. Stir in enough of the remaining flour to form firm dough. Turn onto a floured surface and knead until smooth and elastic, about 4 to 6 minutes. Place in greased bowl, turning to grease top. Cover and let rise until doubled, about 45 minutes. Punch down dough; divide in half. Shape into loaf form, place into greased loaf pans. Cover and let rise until doubled in bulk, about 45 minutes. Beat remaining egg with water; brush over tops of loaves. Bake at 375 degrees F for 30 to 35 minutes, or until golden brown.
- For sandwich filling: peanut butter mixed with honey, topped with thinly sliced apples.
