Local Barbeque Teams To Compete In National Contest

Two professional BBQ teams are heading to Tennessee this month for a serious competition.

It's the 24th Annual Jack Daniel's World Championship Invitational Barbecue. Owasso's "Little Pig Town" and Tulsa's "Team Enoserv" will take on 66 other American competitors and 20 international teams.

They're vying for a $30,000 grand prize.

Members of Team Enoserv stopped by Channel 8's studios Friday morning. Team member Mike Hays said their barbeque trailer unit is far from any old pit.

"This is serious business. A lot of high-dollar cookers and high dollar barbeque rigs. It's a pretty serious hobby when you get to this level," Hayes said.

Team Enoserv works out of a 30-foot trailer that's half kitchen up front and smoker in back.

Hays added that the contest doesn't supply the meat. Competitors have to bring their own, and suppliers can charge up to $200 for just one brisket.

"Competition BBQ is a little different than if you went to a restaurant or you cook it at home," Hayes explained. "The judges that judge your meat have to judge such a quantity of meat that they only take one or two bites. Every bit of flavor that you're trying to communicate to those judges you have to do in just one or two bites."

Hays and teammate Don Simpson will travel to Lynchburg, Tenn. October 27th. "The Jack", as it's called by competitors, is well known as one of the top barbeque contests in the world.
