Tailgating season is in full swing and these beer brat sliders will be sure to score a winning touchdown at your next tailgating party or at home while watching the big game in front of the TV!

6 thick-sliced bacon strips, chopped

1 pound uncooked bratwurst links, casings removed

1 large onion, finely chopped

4 garlic cloves, minced

1 package (8 ounces) cream cheese, cubed

1 cup dark beer or nonalcoholic beer

1 Tablespoon Dijon mustard

Splash Louisiana hot sauce, optional

Or

Pinch red pepper flakes, optional

1/4 teaspoon freshly cracked pepper

16 dinner rolls, split and toasted

2 cups cheddar or pepper jack cheese

Your favorite potato or corn chips

• In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Pat dry and crumble. Cook bratwurst and onion in drippings over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain grease.
• Stir in the cream cheese, dark beer, mustard, hot sauce or red pepper flakes, if using, and pepper. Bring to a simmer. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened, stirring occasionally. Add bacon crumbles and stir. Spoon about 1/4 cup onto each roll. Sprinkle with cheese. Replace tops. Makes 16 sliders. Serve with your favorite chips and sliced pickles.
