Mary Anne’s Witches’ Brew Chili

By the picking of my thumb, something delicious this way comes…! Before the trick-or treating begins, serve your family a big bowl of this hauntingly delicious chili! However, it's so good, they'll probably ask for it throughout the year.

 

1 pound ground chuck

1 pound ground Italian sausage, mild, sweet, or hot

1 large onion, diced

4 cloves garlic, minced

2+ jalapenos, chopped, depending on the desired heat, optional

1 red or orange bell pepper, diced

1 (15 ounce) can red kidney beans, drained and rinsed

1 (15 ounce) can black beans, drained and rinsed

1 (15 ounce) can cannellini beans, drained and rinsed

1 (29 ounce) can tomato sauce

1 can Rotel, mild or hot, according to taste

1/2 cup beef broth or water

1 (15 ounce) can pumpkin puree

1-2 Tablespoons pumpkin pie spice, more or less according to taste

1/2 teaspoon curry

1 teaspoon cumin

1/2 teaspoon cayenne

Or

Pinch or more of red pepper flakes

1 1/2 Tablespoons chili powder

Salt and pepper, to taste

  • In a large pot over medium heat, sauté' beef and Italian sausage until no longer pink. Drain and rinse with hot water. Return to pot and sauté' onion, garlic, and bell pepper. Add beans, tomato sauce, Rotel, and pumpkin puree. Stir in spices and simmer on low for approximately one hour. Taste check chili and add more seasonings if your family likes a spicier chili.

Serves approximately 8.

Note: You can sauté ground beef, sausage, onions, garlic and bell pepper on top of the stove and then place in slow cooker with other ingredients to cook on low for approximately 4 hours or on high for 2 hours. Serve with your favorite chili toppings or in bread bowls.

Note: You can substitute one large can of diced tomatoes with juice or 29 ounces of V8 juice
for the 29 ounce can of tomato sauce. You can also substitute ground turkey, chicken and turkey sausage or chicken sausage for the ground beef and sausage.

Note: If your family likes a thinner chili, go ahead and add a little more beef broth to your
desired consistency.
