
If you're like most families today, you probably have lots of Thanksgiving leftovers sitting in your refrigerator. Why not make a hearty, rich-tasting casserole that's sure to be a big hit with your family and houseguests! Plus, it goes together quickly and leaves you free to hit those Black Friday sales.
5 ½ cups leftover mashed potatoes
4 cups leftover dressing
4 cups cubed cooked turkey
2 cans (103/4 ounces each) condensed cream of chicken soup, undiluted
1 cup turkey gravy
Or
1 can or jar turkey gravy
1 teaspoon garlic powder
Salt and pepper, to taste
1/4 cup sour cream, plus 2/4 cup sour cream, optional
4 ounces cream cheese, softened, optional
2 cups shredded cheddar cheese
Preheat oven to 350 degrees F. Spray a 9x13-inch baking dish with non-vegetable spray (Pam) or grease bottom and sides with butter.
Add the dressing in bottom of baking dish. In a large bowl, combine the diced turkey, soup, gravy, garlic powder, salt and pepper and ¼ cup sour cream. Spoon over dressing.
Place mashed potatoes in another large bowl. Heat for a couple of minutes in microwave until they are heated throughout. Remove and add the cream cheese and remaining sour cream; spread over turkey mixture. Top with shredded cheddar cheese. Bake uncovered for 30-35 minutes or until cheese is melted and the dish is hot and bubbly. Makes 8 servings.
Note: If your mashed potatoes already are loaded with cream cheese and sour cream, go ahead and omit adding those ingredients and proceed with the recipe.
