Oatmeal Pecan Pie

Crust:

1 (9-inch) unbaked pie shell


Filling:

1/2 plus 1/8 cup Karo Dark Corn Syrup

1/2 plus 1/8 cup sugar

1/4 cup butter, melted

2 teaspoons vanilla

1/8 teaspoon salt

3 eggs, beaten

1/2 plus 1/8 cup quick-cooking oats

1 1/2 cups pecans, chopped


Garnish:

Whipped cream

  • Preheat oven to 350 degrees F. Heat Karo dark corn syrup in microwave until just warm. Add sugar, butter, vanilla, salt and eggs; beat well. Stir in oatmeal and then pecans. Pour filling into the unbaked pie shell. Bake pie for 35 to 40 minutes, or until center is firm. When the pie has cooled, garnish with whipped cream, if desired.

Yields: 8 servings
