Mary Anne’s Dr Pepper Bundt Cake

Dr Pepper was created in the 1880’s by Charles Alderton of Waco, Texas and first served around 1885. Dr Pepper was first nationally marketed in the United States in 1904. It is is now also sold in Europe, Asia, Canada, Mexico, Australia, New Zealand, South Africa, and South America. This unique cola gives this cake a rich, moist, caramel flavor! Some of my friends have said it even reminded them of a sour cream cake doughnut. Oh My!

1 box yellow cake mix

1 (3-ounce) box instant vanilla or French vanilla pudding

4 eggs, room temperature

3/4 cup vegetable oil

1 (12-ounce) can warm Dr Pepper, minus about 2 ounces for glaze

Dash cinnamon

3/4 cups toasted chopped pecans or walnuts


Glaze:

1 cup powdered sugar

1 teaspoon pure vanilla extract

Pinch cinnamon

Dr Pepper, enough to make a thin glaze, about 2 ounces

  • Preheat oven to 350 degrees F. Spray a bundt pan with a non-vegetable baking spray with flour. In a large mixing bowl, mix all ingredients together and pour into prepared bundt pan. Bake for approximately one hour or until a toothpick inserted comes out clean. Remove from pan after a few minutes and let cake cool.
  • While cake is baking, make the glaze by adding all ingredients in a medium bowl. Mix well and set aside. When cake has cooled, pour glaze over the top. Cut and serve. Makes approximately 12 servings. Delicious alone or served with ice cream.
