Bacon Artichoke Potato Salad

VOTED AMERICA’S BEST POTATO SALAD AT THE WORLD FOOD CHAMPIONSHIP 2013 LAS VEGAS

Served cold, this refreshing potato salad features marinated artichoke hearts and crunchy bacon.

Ingredients:

2 lbs.

Small red potatoes – quartered or cut for average size bites

1 Tbs.

Kosher or Sea Salt (for boiling water)

¾ cup

Mayonnaise

2 Tbs.

Chopped green onion (green tops only)

¾ cup

Diced red bell pepper

6 slices

Pre-cooked bacon, fresh bacon or real bacon bits

2 Tbs.

Granny’s Good Ol’ Fashion Bacon Drippings – warmed

¾ cup

Sour cream

4 oz. can green chilies

1

7.5 oz. jar (lightly drained) marinated artichoke hearts (coarsely chopped)

1 Tbs.

Kosher or Sea Salt (for dressing)

1 tsp.

Coarse ground black pepper

1 tsp.

Dijon mustard

Directions:

STEP 1 Cut unpeeled potatoes and place them in a medium sauce pan. Cover with cold water. Add 1 TBS. Salt. Cover with lid, bring to boil, then remove lid, lower heat to a rapid simmer for 15-20 minutes. Potatoes should be cooked through just at fork tender.

STEP 2 While potatoes are cooking, fry bacon (crispy) if using real bacon. Mix all other ingredients (except the bacon) together in a medium bowl.

STEP 3 Once potatoes are done, drain water and let potatoes sit for about a minute in the hot pan. While potatoes are still hot, add them directly to the mixture. Coat potatoes well. Refrigerate. Gently stir a couple of times as salad cools. Cover salad once cold.

STEP 4 Gently stir potato salad, pour into serving dish, garnish with bacon, serve cold.
