Made with all Oklahoma ingredients, offered by vendors of the Brookside Winter Farmer’s Market. A great appetizer for guests, easily made ahead so you can relax and enjoy - enough for a dozen guests.
1 Farrell’s Family baguette (available next door at Whole Foods during the winter)
4 Tablespoons of olive oil
Canyon Ridge goat cheese --- they offer many different flavor varieties, sold in pint containers, the “Plain” is very good in this recipe.
!/2 pound of bacon, fried crisp and chopped into small pieces (there are many market sources including Pork and Greens, Koehn Farms, Greenwood Farms and Rae Blakley)
2 Tablespoons Gold Standard Honey
Slice the baguette horizontal, the long way with a bread knife.
Toast under the broiler, this should only take 2 to 4 minutes, cut sides up. keep a close eye on how brown they’re getting. It’s easy to burn them.
Assemble the baguette by spreading the goat cheese down the toasted baguette, sprinkling bits of bacon on the goat cheese and drizzling a thin stream of honey on top. Or, you can take the easy and informal way out. Put out the ingredients and let your guests build their own. Additional toppings of caramelized onions and fresh chopped arugula are wonderful.
