Balsamic grilled vegetables

• 1 cup olive oil

• ½ cup balsamic vinegar

• 1 tbsp. garlic cloves

• 1 tbsp. shallots

• Pinch of salt and pepper

• 1 red pepper cut into 4 pieces

• 1 yellow pepper cut into 4 pieces

• 1 medium zucchini, trimmed, cut lengthwise into 1/4-inch-thick slices

• 1 medium-size yellow crookneck squash, trimmed, cut lengthwise into 1/4-inch-

thick slices

• 6 green onions

In a blender mix first five ingredients. Place vegetables in a bowl and toss with

vinaigrette. Grill vegetables until slightly cooked through. Vegetables should still have

some bite. Arrange on platter and serve.
