Mary Anne’s Banana Chocolate Chip Muffins

Moist, yummy, and filled with pockets of chocolate, what could be better! These muffins are so easy to make and this recipe is a great alternative to using up those overripe bananas everyone seems to have on hand.

1 1/2 cups all-purpose flour

1/2 cup sugar

1 1/2 teaspoons baking powder

1/4 teaspoon salt

3/4 - 1 cup chocolate chips

1/2 cup toasted chopped pecans, optional

3 overripe bananas, mashed (Should equal 1 cup)

1 large egg

1 stick unsalted butter, melted

1/4 cup milk, whole or low-fat

1 teaspoon pure vanilla extract

Cinnamon sugar, optional

  • Preheat oven to 350 degrees F. Line one muffin tin with paper liners. Set aside.
  • In a large bowl, mix flour, sugar, baking powder, salt, chocolate chips and pecans, if using, together. Set aside briefly.
  • In a separate bowl, mix banana, egg, butter, milk, and vanilla extract together. Stir the banana mixture gently into the dry ingredients until just combined.
  • Using an ice-cream scoop, spoon batter about half-way into the prepared muffin cups. Sprinkle lightly with cinnamon sugar, if using. Note: Give them a tap on the counter to get any air bubbles out.
  • Bake at 350 degrees F until a toothpick inserted comes out clean, about 20-30 minutes, depending on oven. Let cool for a few minutes before removing them from tin. Serve warm or at room temperature.

Makes 12 muffins.

Note: If your bananas are not over-ripe, put them in the microwave for a few seconds with a little brown sugar on top and then mash them after removing from microwave.
