Moist, yummy, and filled with pockets of chocolate, what could be better! These muffins are so easy to make and this recipe is a great alternative to using up those overripe bananas everyone seems to have on hand.
1 1/2 cups all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 - 1 cup chocolate chips
1/2 cup toasted chopped pecans, optional
3 overripe bananas, mashed (Should equal 1 cup)
1 large egg
1 stick unsalted butter, melted
1/4 cup milk, whole or low-fat
1 teaspoon pure vanilla extract
Cinnamon sugar, optional
Makes 12 muffins.
Note: If your bananas are not over-ripe, put them in the microwave for a few seconds with a little brown sugar on top and then mash them after removing from microwave.
